
Super Sloppy Joes
1 cup chopped yellow onion
1/2 pound ground beef (93% recommended)
1 can (15oz) Pork and Beans, drained
1 can (15.5 oz) Manwich (original is best here)
8 hamburger buns
Spray skillet with non-stick spray and saute onions (about 5 minutes or until tender). Add ground beef and cook 7 minutes (or until beef crumbles/is no longer pink). Add drained beans and Sloppy Joe Sauce to beef; heat until hot. Serve on buns and enjoy! Makes 8 servings.
~Great way to stretch your beef by adding inexpensive goodies~
Picante Chicken & Rice Bake
1 jar (16 oz Picante Sauce)
1/2 cup water
1 cup whole kernal corn
3/4 cup uncooked regular long-grain white rice
4 skinless, boneless chicken breat halves (about 1 pound)
Paprika
1/2 cup shredded Cheddar cheese
Stir the picante suace, water, corn and rice in a 2-quart shallow baking dish. Top with the chicken. Sprinkle the chicken with paprika. Cover the baking dish. Bake at 357 degrees F, for 45 minutes or until the chicken is cooked through and the rice is tender. Sprinkle with the cheese.
~Yum!! Change up the cheese (i.e. goat's milk cheese or lactose-free cheese), or leave it out, for a dairy friendly inexpensive meal!~
The Best Meatloaf Ever!!
1 1/2 pounds ground beef (recommend 90% lean)
1 cup 2% milk
1 Tbsp Worcestershire sauce
1/4 tsp dried sage
1/2 tsp salt
1/2 tsp dry mustard
1/4 tsp fresh ground pepper (fresh is best if possible, if not it's o.k. to use regular)
2 gloves garlic, minced
1 small onion, finely chopped
1/2 cup dry bread crumbs (or saltine crackers)
1/2 cup ketchup or BBQ sauce
Preheat oven to 350 degrees. Combine all ingredients EXCEPT ketchup in a large bowl, and mix well. Place mixture into an ungreased loaf pan or shape into a loaf in an ungreased baking pan. Spread ketchup (or BBQ sauce) over the top of the meatloaf. Bake uncovered for 1 to 1 1/4 hours until no pink remains at the center of the meatloaf. Or using a meat thermometer reading 160 degrees. After baking, let sit for 5 minutes before removing from pan and slicing.
~I use my leftovers in (A) sandwhiches with cheese melted over the top and/or (B) Bite-size pieces warmed and placed in a tortilla with shredded cheese and a little yellow mustard!~
